Pickle.
In a small bowl, combine sliced cucumbers with a teaspoon of sugar and a pinch of salt. Let sit for a few minutes (or as long as you have!) until lightly pickled and bright. -
Whip.
Stir fresh lemon juice into Kewpie mayonnaise to create a zesty, creamy sauce with a sharp edge that cuts through the richness. -
Layer.
Spread a generous layer of Forged Smoked Quail Spread onto the toasted brioche. Add a spoonful of the zesty Kewpie, then top with the pickled cucumbers for crunch and contrast.
