Smoked Spread Zesty Brioche Bites

Smoked Spread: Big Flavour on a Small Plate

Serves: 6

You’ll need

  • Forged Cultured Quail Smoked Spread

  • Mini Brioche

  • Kewpie Mayo

  • Cucumber

  • Sugar

 



Method

  1. Toast.
    Slice mini brioche buns in half. In a hot pan, sear each side with a little Forged Smoked Quail Spread until golden and lightly crisp — this builds a smoky, buttery base.

  2. Pickle.
    In a small bowl, combine sliced cucumbers with a teaspoon of sugar and a pinch of salt. Let sit for a few minutes (or as long as you have!) until lightly pickled and bright.

  3. Whip.
    Stir fresh lemon juice into Kewpie mayonnaise to create a zesty, creamy sauce with a sharp edge that cuts through the richness.

  4. Layer.
    Spread a generous layer of Forged Smoked Quail Spread onto the toasted brioche. Add a spoonful of the zesty Kewpie, then top with the pickled cucumbers for crunch and contrast.

 



To serve

Stack and serve warm — each brioche bite layered with smoky cultured quail, zesty mayo, and bright pickled cucumber.

Buttery, tangy, and fresh, it's the kind of bite that disappears before you’ve finished describing it.
