Our cultured quail croquettes are crisp and golden, giving way to a creamy and umami mash of desir ée potato and parfait — nostalgia, but better.

No prep. No faff. Just deep, meaty, rich flavour — ready to go straight from the freezer. For the best result, shallow fry, then pile high.

Plays well with: aioli, pickled chillies, shaved truffle, and a glass of something crisp.

But it's the same cooking method she used:

  1. Heat 10 mm of oil in a pan to 165 °C.
  2. Shallow-fry the croquettes for 3 minutes per side (about 6 minutes total) until golden and crisp.
  3. Serve hot with a dash of aioli.
