Butternut Pumpkin Ravioli with Brown Smoked Spread & Crispy Sage

Method

Boil.
Drop the ravioli into salted boiling water and cook until al dente. -
Brown.
While the pasta cooks, heat a pan over medium-high heat. Add the Forged Cultured Quail Smoked Spread and heat until begins to foam. -
Infuse.
Add the sage leaves and cook until they’re crisp and the spread has turned a deep, nutty brown. Remove the leaves and set aside. Finish the sauce with a squeeze of lemon juice. -
Toss.
Drain the ravioli, then toss it through the sauce, making sure to coat evenly and collect every drop of those rich quail juices. Season to taste. -
Finish.
Plate the ravioli, spooning over any leftover sauce. Scatter the crisp sage leaves on top.
